Tuna Niçoise Salad
This tuna salad is great for those hot summer days. It’s not only refreshing but easy to make. With just some simple steps, you can make this for lunches, dinners or even as a meal prep item for the week.
4 teaspoons
3 tablespoons
2 clovesminced
6 cups
2 cupssteamed just to tender
1 cupcut in halves
14 ozdrained
6 eachhard-boiled, sliced
Mince 2 cloves of garlic
Steam 2 cups of string beans, until tender
Cut 1 cup of cherry tomatoes in halves
Drain 14 oz of tuna
Hard-boil 6 eggs, then peel and slice

Whisk together oil, vinegar and garlic in a small bowl. Set aside.

In a steamer, steam the string beans for about 4 minutes to just tender.

In a small pot filled with water. Place eggs and over high heat bring to boil. Depending on yoke preference, boil for 4-8 minutes.

In a large salad bowl, add greens. Layer in the string beans, tomatoes, egg slices and tuna.

Drizzle oil mixture. Toss and serve immediately.
