Tuna Niçoise Salad

  • 4 teaspoons

  • 3 tablespoons

  • 2 clovesminced

  • 6 cups

  • 2 cupssteamed just to tender

  • 1 cupcut in halves

  • 14 ozdrained

  • 6 eachhard-boiled, sliced


  1. Mince 2 cloves of garlic

  2. Steam 2 cups of string beans, until tender

  3. Cut 1 cup of cherry tomatoes in halves

  4. Drain 14 oz of tuna

  5. Hard-boil 6 eggs, then peel and slice

    Whisk together oil, vinegar and garlic in a small bowl. Set aside.

    In a steamer, steam the string beans for about 4 minutes to just tender.

    In a small pot filled with water. Place eggs and over high heat bring to boil. Depending on yoke preference, boil for 4-8 minutes.

    In a large salad bowl, add greens. Layer in the string beans, tomatoes, egg slices and tuna.

    Drizzle oil mixture. Toss and serve immediately.
