Thai Protein Lettuce Wrap

Ingredients

  • 1 tablespoon

  • 1/4 cupdiced

  • 2 clovesminced

  • 1 tablespoonminced or grinder paste

  • 10 oz

  • 1/4 cup

  • 2 tablespoons

  • 1 eachjuiced

  • 1 teaspoon

  • 1/3 cupchopped

  • 1/4 cupchopped

  • 1/4 cup

  • 1/4 - 1/2 cupshredded

  • 1 eachleaves separated and wached

Preparation

  1. Preheat pan over medium-high heat with oil

  2. Dice 1/4 cup onion

  3. Mince 2 cloves of garlic

  4. Mince 1 tablespoon of ginger

  5. Juice 1 lime

  6. Chop 1/3 cup cashews

  7. Chop 1/4 cup scallions

  8. Shred 1/4-1/2 cup carrots

  9. Wash and separate leaves from 1 head of butter lettuce

Directions

    Make the garlic, ginger pan sauce. Heat up a pan to medium high heat and add the oil. Once the oil is hot, add in the onions. Toss and let cook for 2-3 minutes until the onions start to brown and turn translucent. Then add in the garlic and ginger. Toss all ingredients together and let it cook for 2 minutes.

    Add the ground protein to the pan, tossing it in the pan sauce break it up with a wooden spoon or spatula. Season the protein with a little salt and pepper and let it cook until it starts to turn golden brown and there is no pink, about 3-4 minutes.

    Meanwhile, in a separate bowl, add coconut aminos, chili sauce, lime juice, and honey. Mix to combine.

    Chop cashews and sprinkle over the protein in the pan and pour in the sauce. Toss all together, reduce from heat to low and let that all cook for 2 more minutes. Remove the pan from heat and let it cool for a few minutes. While cooling, chop carrots, scallions and cilantro. Add to protein mix and toss.

    To assemble the lettuce wraps, open one of the lettuce leaves and add a big spoonful of the mixture into the wrap. Repeat for additional wraps and serve immediately.
