Stuffed Cabbage Casserole
This casserole is a great one pot dinner and is ready in 30 minutes or less. Perfect for a quick weeknight meal or meal prep for the week.

1 1/2 cup
1 cup
1 cupshredded
chopped
Chop 1/2 white onion
Chop 1/2 green cabbage
Shred 1 cup white cheddar cheese

In a large Dutch oven or big pot, over medium high heat, brown turkey with olive oil and onions.

Reduce heat to medium; add garlic powder, onion powder, thyme, salt and pepper. Stir

Add diced tomatoes, water and quinoa to pot. Bring to boil.

Add cabbage, cover and reduce heat to medium low. Cook around 10 minutes or until rice is tender. Add salt and pepper to taste.

Top with cheese and cover 1-2 minutes to melt, if wanting cheese.

Remove from heat and sprinkle with fresh chopped parsley.
