Strawberry Broccoli Salad with Creamy Poppy Seed Dressing

Salad Ingredients

  • 1 lb

  • 5 cupstrimmed to florets, chopped

  • 1 1/2 cupschopped

  • 1/4 cupsdiced

  • 1 eachchopped

  • 1 eachchopped

  • 1 eachchopped

  • 3/4 cup

  • 1/2 cup

  • 1/3 cup

Creamy Poppy Seed Dressing Ingredients

  • 1 cup

  • 1/2 eachjuiced

  • 1 tablespoon

  • 1-2 tablespoon

  • 1 tablespoon


  1. Trim 5 cups of brockcoli to florets and chop

  2. Chop 1 1/2 cups of strawberries

  3. Dice 1/4 cup of red onion

  4. Chop 1 pear

  5. Chop 1 fuji apple

  6. Chop 1 avocado

  7. Juice 1/2 lemon

    Chicken: Cut raw chicken into strips. Season with salt and pepper. Heat a tbsp of oil in a large skillet. Once oil is hot, place chicken. Cook until golden brown on all sides and no pink is in the middle.

    Plant-based protein: Prepare based on directions given or set aside.

    Add all the salad ingredients into a large mixing bowl except the avocados.

    In a jar or small bowl, shake or whisk together the dressing ingredients. Add desired amount of dressing to salad and toss until evenly coated. Best if chilled for at least 30 minutes up to overnight. Toss with avocados just before serving.
