Skinny Chicken Queso
Celebrate Cinco de Mayo with this delicious Chicken Queso with your favorite vegetable sides. This is great to pair with your snacks, have as part of your meal or something to bring to enjoy with family and friends.

preheat to 350 degrees
12 ozcooked and shredded
1 1/2 cupsshredded
1 lbhalved lengthwise, stems and seeds removed
2 1/2 cups
Preheat oven to 350 degrees
Cook 12 oz of chicken breast, then shred
shred 1 1/2 cup of white sharp cheddar cheese
Soften 4 tablespoons of cream cheese
Cut 1 lb of mini bell-peppers in half lengthwise. Remove stems and seeds.
Cut 2 1/2 cups of celery into sticks
Combine all ingredients into a bowl except the cilantro, peppers and celery
Lightly grease a medium size casserole dish. Transfer the mixture to casserole dish.
Bake for 20 minutes until heated through. Serve hot with halved mini bell-peppers and celery sticks.
