Blueberry Peach Feta Salad
This summery salad is light yet filling. Pair with chicken or your favorite plant-based protein to make it a complete meal or as a side with lunch or dinner.

1/2 cups
1/2 eachjuiced
1 tablespoon

1 tablespoonfinely chopped
Dice 2 peaches
Slice 2 persian cucumbers
Juice 1/2 of a lemon
Finely chop 1 tablespoon of basil

Chicken: Cut raw chicken into strips. Season with salt and pepper. Heat a tablespoon of oil in a large skillet. Once oil is hot, place chicken. Cook until golden brown on all sides and now pink is in the middle.

Plant-based protein: Prepare based on directions given or set aside.

In a large mixing bowl, combine blueberries, peaches, cucumbers, feta, and protein.

In a jar with a lid, combine the lemon juice, dijon mustard, honey, olive oil, basil, salt and pepper.

Pour the vinaigrette over the salad and gently mix everything together. Taste for seasoning and garnish with exra basil. Serve immediatley or cover and refrigerate until ready to serve.
